Go Bananas!

This is perhaps one of the simplest desserts you will ever make. Twenty minutes max plus a few hours in the fridge and you have a scrumptiously sweet treat that will have your family begging for more. 

Who would have thought that biscuits, banana and caramel would taste so good? Of course, you could always deconstruct this and have it as a snack if you have any leftover caramel - one biscuit topped with caramel and sliced banana - but only if you have remarkable self-control, otherwise serious damage could occur. (Just to warn you!)




You will need five ingredients: butter, bananas, digestive biscuits (try substituting graham crackers if you can't find these), caramel and cream. Plus a little chocolate to sprinkle over the top! For added wow factor you can make your own caramel, but it will work just as well with a tin! I chose Carnation Caramel, and I'll admit that not all of the caramel found its way into the pie. Shh...



Simple Banoffee Pie
2 bananas
1 medium-sized tin of caramel (approx. 350 - 400g)
250g digestive biscuits or equivalent 
100g melted butter
Small carton of whipping cream
Milk or dark chocolate, to decorate

1. After bashing the biscuits, mix them with the melted butter and press firmly into a 23cm loose-bottomed tart tin. Make sure it spreads up the sides, otherwise your tart will spill over! Chill in the fridge for at least half an hour, until firm. 

2. Open the tin of caramel and pour into a bowl. Mix with one chopped banana and spread over the biscuit base. 

3. Chop the other banana and arrange over the caramel. Top with whipped cream and chill for another half-hour or more. 

4. To serve, remove from the fridge, push up from the tart tin and grate a little chocolate over the cream. Take to the table and serve to the masses! 

It will keep for about two days in the fridge - though I doubt you'll have it for that long.
